I have recently become obsessed with trying new ideas out in the kitchen. I am a big fan of tapas and nibbly bits that gets everyone involved around the table, not only that but you can try plenty of plates without going through the hard decisions of what to pick for your starter and main from the menu. Me and my mum (most likely always to be wearing her master chef apron) cooked up a storm on Saturday night and I would like to share a new simple and easy dish with you; Goats cheese and red onion chutney tarts.
Look yummy don't they... simply roll out some puff pastry (not to thin) and cut into squares, in the centre of each lightly make a circle and pop in the oven until they are taking shape but not fully cooked. Gently take of the top of the circle you made, within this place a spoon full of what chutney takes your fancy, add the goats cheese and a sprinkle of rosemary, put the pastry lid back on and pop back in the oven till cooked. hey presto!
Cant resist my mums freshly made plain and chocolate meringues for dessert....
For anybody who lives in the Preston or even Lancashire area and you own a dog, you should take them to Lytham, park up and enjoy the dog club (Nicely named by my dad). Walking along the sandy paths with dogs running wild is great fun for all, the views of the bay are too bad either ...
